This rooster crowing becomes somewhat thematic lod it is referenced at the end of pretty much ever phrase throughout the rest of the piece. Despite the editing the effect in most performances is almost the opposite.
Took up the piece and much enjoying playing it. There is the busyness of the work in the fields, then the sound of the bells from the church and also the sound of a chant, drifting across the fields.
To get part of the effect Rodrigo is asking for, try playing the initial semi quaver “a” notes alone with just a single f bass note at tempo. Rodriyo my ears the next phrase then is so much more dramatic with that poco rit adding yet again.

Rodrigo asks for two “changes” in tempo, the first is the fermata at the end of bar 8 and the poco rit at trigals Most play it slower. Playing just the top line with the articulation Rodrigo writes gives a good introduction to what he is after.
